Do pickled vegetables such as beets, cauliflower, green beans, etc.. have any nutritional value?

Pickles are the cooked vegetable, preserved with vinegar and salt. They contain all of the fiber, and most of the minerals and vitamins that were in the fresh vegetable. Unfortunately most are high in salt which raises blood pressure in many people. For this reason they should be consumed in moderation.

  1. I love pickled veggies. I make my own using very little to no salt.
