Blueberry-Pineapple Parfaits 

Try this cool fruit filled dessert.

This is one of our own Fruits & Veggies—More Matters™ recipes. It meets the Centers for Disease Control and Prevention’s strict nutrition guidelines as a healthy recipe.

Preparation time: 15 minutes (plus thawing time if using frozen berries)

Serves: 4

Cups of Fruits and Vegetables per Serving: 1

Ingredients:

1 20-oz. can pineapple chunks, drained
1 container (8 oz.) low-fat lemon flavored yogurt
1 ½ cups fresh or frozen blueberries, thawed and patted dry
½ cup granola
   

In a small bowl, combine the pineapple with half of the yogurt.

In small wineglasses or juice glasses, alternately layer the pineapple-yogurt mixture, blueberries, and granola.

Repeat the layering twice.

Top each parfait with a dollop of yogurt.

Each serving provides: An excellent source of vitamin C and a good source of calcium, magnesium, potassium and fiber.
