Am I the only one who is having a hard time believing summer is almost over?? It’s true though–this weekend we celebrate Labor day, the “unofficial” end of the summer season and the beginning of another school year. If you’re like many folks, you’ll be spending at least one day of your long weekend at a picnic or cookout celebrating the holiday. Instead of the usual BBQ fare, I pulled together some delicious, yet healthy choices you can serve from our friends at Fruits & Veggies–More Matters. These options are sure to be a hit with your guests and you’re the only one who has to know they’re healthy recipes!
- Entrees: Forget the burgers and dogs this time and go with something that will really impress your guests. Vidalia Onion & Tomato Salad with Grilled Tuna blends the flavors of the season! Right now tomatoes are at their peak of flavor–if you have your own garden you can add them straight off the vine. If not, stop by your local farmer’s market and grab a few local tomatoes that will be just as sweet. Another great entree option is Pesto Chicken Vegetable Kebabs. Marinated chicken and in-season veggies like cherry tomatoes, zucchini and green peppers make this choice both tasty and budget-friendly!
- Side Dishes: Upgrade the usual potato and macroni salad to dishes that add more flavor, color and nutrition. Mango Berry Rotini Salad takes the usual pasta salad to another level with its sweet and savory flavor. The fruit, baby spinach and feta cheese add an interesting twist to this dish. If you’re bored with the traditional bean salad recipe, try Garden Cannellini Bean Salad. It uses in-season veggies like tomatoes, cucumber and bell pepper in this dish.
- Dessert: Try grilling your favorite in-season fruit like peaches, nectarines or even watermelon! Your Produce Man even has some tips on how to grill this popular summer fruit.
Enjoy and have a safe and happy Labor day!
