Wash the potato well, removing dirt and particles on the skin. Poke the potato several times with a fork to create holes for the steam to escape so your potato doesn’t explode. Place on a microwave-safe plate and cover with a paper towel. Cooking time will vary depending on the microwave and size of your potato. One small red potato may take only 1-2 minutes, and larger red potatoes may take up to 5 minutes. If you are microwaving several potatoes at one time, allow extra time – up to 7 minutes. Add more time if necessary. Potatoes should be flipped over half way through cooking so they cook evenly. Let sit for 1-2 minutes before serving. Serve and enjoy!
