HiMy husband recently has half of his stomach removed and tend not taking solid food as well as vegetable as to avoid vomiting. In order for him to have vegetable intake. I put cut up vegetables in a bowl with little water and steam using pressure cooker. After cooking, I liquidize everything in the bowl to make a thick soup.Please tell me if liquidising process kills vitamin and nutrient.Thanks.

Liquefying fruits and vegetables will not kill vitamin and nutrient content. Some vitamins are affected by exposure to light, air, and cooking in too much water. Prepare vegetables as close to serving as possible, and store leftovers covered in the refrigerator.
