How to cook artichokes in microwave

Rap artichoke forcefully against the counter top or cutting board to separate petals. Soak in lukewarm water for a few minutes to clean. Drain. Remove stem and dark outer petals. Cut off top 1/3 of artichoke and remove thorns on the end of petals with scissors. Open artichoke with your fingers and scoop out the central choke with a melon baler or grapefruit spoon. Place artichoke in a microwave-safe dish and sprinkle with water. Cover and microwave on high for 6-8 minutes. Let stand for 1-2 minutes before testing for doneness- petals in the center will pull out easily and you will be able to indent the base with your finger.
