Gently wash the beets, leaving the thin skin intact for cooking. It will easily peel off under cold running water after cooking. When trimming, leave at least an inch of the leaf stems attached and do not remove the root. The stem and root are removed after cooking. Beets can be boiled, baked, steamed, or grilled. For even cooking, use beets of even size. Cover with water and boil until they can be easily pricked with a fork. The time will depend on the size of the beet. To bake, wrap in foil and bake at 350 degrees until done. Herbs and spices that go well with beets include allspice, bay leaf, cloves, chives, dill weed, garlic, mustard seed, thyme, and citrus.
