Why is the inside of a freshly cut open pear, brown before the air can even get to it ? Straight from the tree, hand picked,cut open and brown

They may have been overripe. When pears are past their peak they start turning brown and soften from the core outward. Such pears aren’t actually spoiled, the flesh is just breaking down as a normal process in the late stage of ripening. In that condition you can still make sauce or pear butter, or cook them.   1. I have picked the pears while still green and hard. As soon as they start to ripen and still have a green cast to the skin—-The’re brown inside. Can you explain this?
