Roasted nuts can either by dry-roasted or oil-roasted. Because nuts are already high in healthy fats, they don’t absorb much more even when roasted in oil. Commercially oil-roasted nuts are roasted in healthy unsaturated oils. Also, while natural nuts do not contain trans fats, there is some evidence that a negligible amount of trans fat is produced after roasting (measurable at 0.07-0.9%). Basically, roasted nuts are a healthy choice whether dry or oil roasted.
