Q: Are there any fruits you shouldn’t mix in a fruit salad? In particular mixing pineapple with other fruits.

A: Pineapples contain enzymes which are biological molecules responsible for certain chemical interactions, such as the breakdown of other molecules.  For example, the enzyme bromelain is a proteolytic enzyme found in pineapples that breaks down proteins.  This is why pineapple and pineapple juice are often used in meat marinades or as meat tenderizers.   These enzymes may also cause slight breakdown of other fruits, such as sliced bananas.  You may want to try adding your pineapple pieces to the fruit salad right before serving to ensure the fruit maintains texture.
