I’ve heard that it’s better to steam vegetables than it is to boil because boiling saps nutrients from them. Is this true? And if so, is grilling veggies on the good side or the bad side? I often like to have hot meals, but I want to get my nutrients, too. Thanks

Steaming tends to preserve nutrients better than boiling because the vegetables are not in direct contact with water.  Water-soluble vitamins will be lost in cooking water when vegetables are cooked in large amounts of it.  Generally, if vegetables are being boiled, using a small amount of water is best.  Grilling vegetables is also fine.  Your best bet is to eat a variety, and cooking vegetables in different ways  will help maintain interest.
