While nutrient loss does occur after a fruit or vegetable loses its protective peel or skin (e.g., has been cut into), the loss does not occur immediately. It may take up to a few days for any major vitamin and/or mineral loss to occur. It is recommended that fruits and vegetables be stored intact until you are going to use them to keep them fresh and prevent any nutrient loss.
