Both fruits and vegetables contain many nutrients that contribute to health. You can find out about dried, canned fruits and veggies and nutrient changes in ripe fruit in our Ask the Expert section by clicking here. Cooking vegetables can cause some nutrient loss, like vitamin C, depending on how they are cooked, but some cooking methods, like steaming briefly, allow most of the nutrients to be retained. Cooking can also increase the bioavailability of some nutrients, like carotenes. No commonly eaten vegetables or fruits are considered unhealthy. 5-A-Day has been replaced by our new initiative, Fruits & Veggies-More Matters. This initiative encourages people to eat More fruits and veggies for better health. You can find out how many fruits and veggies you should be eating at our How Much Do You Need section.
