I’m starting a diet that limits my intake for 3 days at a time. One of the items that are allowed are beets. I’m not much of a beet eater. What do you suggest as a substitute for beets?

Beets are a type of root vegetable and are a great source of folate and antioxidants.  Other root vegetables include carrots, jimacas, parsnips, radishes, rutabagas, sweet potatoes, and turnips.  As far as calorie content, a carrot and a turnip have almost the same amount of calories as a beet.  Check out our Fruit and Vegetable Recipe Search for some ideas on including these vegetables in your diet.
