My sister-in-law is a cancer victim and she is eating only fresh vegies and fruit. I would like to cut her fruit and vegies into small portions and put them in a zip lock bag for several days so she doesn’t have to stand every day and take the time to chop but I’m concerned that the nutrition becomes compromised when it sits for a few days.

Once you have cut up the pieces of fruit, store them in an airtight container in the refrigerator.  The fruit should stay fresh for up to five days if stored this way. Strawberries may have a shorter shelf life and only stay fresh for about 1 to 3 days in the refrigerator.  Cut-up apples, cantaloupes, and oranges, however, may stay fresh for up to a week.
