What is chard & how do you cook it and what do you use it in?

Swiss chard is a leafy green that is an excellent source of vitamin A and potassium and a good source of vitamin C. It has only 7 calories per one cup. It can be cooked as you would any other green and used as a side dish. One easy way is to heat a tablespoon of olive oil with a clove of garlic, add Swiss chard, coarsely chopped and a little water, cook over medium heat until chard is wilted.  Click here for a delicious soup recipe, just substitute chard for the greens.
