I like to substitute spaghetti squash for my pasta but I’m not sure what the proper amount is and how to count it – X # carb – 1/2cup – 1 fruit?/ vegetable. Also I make my own whole cranberry sauce using Splenda, onions. water, etc. Would I still count a serving (1/4 cup of cooked) as 1 fruit plus the Splenda?

I thawed frozen corn and after a week it is still sitting in the refrigerator..can I still cook it?

I would not. The quality of frozen vegetables is best when they are cooked from the frozen state, or immediately after thawing. After a week in the refrigerator the corn is probably spoiling and may not be safe to eat (even if you cook it). A good rule of thumb is “when in doubt, throw it out”.
