Cheese is a good source of protein and calcium, among other nutrients. However, regular cheese is high in saturated fat, which contributes significantly to development OF high cholesterol levels in the blood. Look for non-fat or low-fat cheeses (dry-curd or low-fat cottage cheese, low-fat natural cheeses) or processed cheeses made with nonfat or low-fat milk. As a guide, the American Heart Association recommends that choices contain no more than 3 grams of total fat per ounce and no more than 2 grams of saturated fat per ounce. Include a piece or slices of fruit with your low-fat cheeses for a special treat.
