Can you eat the skin on a sweet potatoe? Can you eat the skin of a beet?

Sweet potatoes and beets are roots of plants, and as such, grow in the ground. They should be washed well before they are cooked to remove any lingering soil. The skins of both sweet potatoes and beets can be eaten.
