Does roasting the nuts change their nutrients, and their storage requirements?

No, roasting nuts does not significantly change the amount of nutrients if it is done the right way.  Avoid roasting nuts at high temperatures.  For best results, roast in oven at 160-170 degrees F for about 15 to 20 minutes.  Store roasted nuts in the refrigerator or freezer to preserve freshness.
