Hi, Do fruits & veggies have more nutrients when they are ripe or not ripe? Is there a difference? Does it vary by type of fruit? Also, Do they have more calories when they are riper (because of increased sugar content)?? Thanks so much.,

The nutritional value of fresh fruit will be affected by its age.  Harvesting too soon or over-ripening will affect the nutrient content.  Many other factors such as soil, climate, amount of sun etc. also affect nutrient content of fruit, so it is difficult to know the extent of differences between ripe and unripe fruit, or between different fruits.
