how do I maintain fruits/veggies color and crispness when using them in salads?

Storing fruits and veggies properly will help to maintain color and crispness.  You can find storage tips here.  Generally, produce should not be washed until it is to be used.  Lettuce should be drained well after washing.  Using a salad spinner or gently rolling the washed leaves in a towel will prevent sogginess.
