How do you freeze fresh vegetables? Such as broccoli, spinach, squash? My boyfriend says you have to blanch them first before freezing. Please help! Thanks!!!
Most fresh vegetables are best blanched (cooked for a very short time with boiling water or hot steam) then frozen, to help preserve freshness. Once the vegetables are blanched, they need to be cooled quickly, as in an ice-water bath then packed in an appropriate container for freezing such as zip-top freezer bag. For broccoli, spinach and summer squash, blanch, cool and pack as described above. For winter squash, cook the squash until tender by roasting or boiling and cool.
