I am allergic to all legumes! what do I use for a substitute?also allergic to soy, coconut, or anything that has been used to process those items: Makes shopping very tedious!

There is not one specific substitute for legumes. Consuming a variety of other fruits and vegetables will give you most of the same health benefits of consuming legumes in terms of vitamins, minerals, fiber and other healthful substances like phytochemicals.
