I just read that legumes are vegetables. True? If so, how much hummus do I need to consume to equal one vegetable serving?
Legumes are vegetables (and are also in the Meat/Protein group of My Pyramid). Half a cup of chick peas constitutes a serving of vegetables, but the volume is reduced when the beans are pureed to make hummus. Whatever else is in your hummus, like tahini or sun dried tomatoes, will also change the volume. A scant ½ cup would be a reasonable amount to count as a serving.
