Vegetables can be included at breakfast in any way that you would enjoy them. Vegetables are great in omelets, can be used in a wrap or on a sandwich, as a salad or in soup. If you are looking for vegetarian/ vegan options, you could try various nut butters such as soy nut butter, almond butter, peanut butter, etc. on toast or crackers, or on top of celery sticks or cucumber slices.
