Whole Wheat Pasta Salad

This pasta salad is great for potluck meals!

Cups of Fruits & Vegetables per Serving: 1
Think Variety; Think Color: Red, Yellow/Orange, White

Ingredients

3 cups whole wheat pasta, cooked and drained

2 bell peppers, diced

1 cup yellow squash, diced

1 cup tomato, diced

1/4 cup onion, diced

1/4 cup black olives , sliced

3 Tbsp lemon juice

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

Directions

  1. Cook pasta according to package directions; drain and set aside.
  2. Wash and prepare bell pepper, squash, tomato, onion and olives as directed.
  3. Mix all ingredients in a large bowl.  Serve immediately or cover and refrigerate.
