This delicious and hearty tuna-based salad is rich in healthy fats!
9 small red potatoes, diced
2 cups green beans
4 1/2 cups mixed salad greens
1 (14 oz) can artichokes, drained, rinsed and chopped
2 medium tomatoes
2 hard broiled eggs, sliced
2 (6 oz) cans tuna, in water, drained
- Cook potatoes in boiling water for 15 minutes. Add green beans for last 5 minutes of cooking.
- Drain and cool for 10 minutes.
- In large bowl, combine potatoes and green beans with remaining ingredients.
