Pineapple Onion Marmalade

1 medium pineapple, fresh

2 cups red onion, cubed

2 cups yellow onion, cubed

1 1/2 Tbsp margarine

2 Tbsp balsamic vinegar

1 tsp sugar

1/2 tsp pepper

1/4 tsp salt


  1. Twist crown from pineapple.
  2. Cut pineapple lengthwise in half, then in quarters. 
  3. Cut fruit from shell. Trim off core; dice pineapple.
  4. Cook onions in margarine, over medium heat for 15 minutes, stirring occasionally.
  5. Add vinegar and sugar; cook 5 minutes longer. Remove from heat; add pineapple and seasonings. Mix well.
  6. Serve with grilled chicken, turkey, or veggie burgers
