Chicken with Lychee Sauce

Serve this sweet chicken with brown rice and steamed vegetables.
1 cup lychees (about 20 large fruits), peeled and pitted
1 small red onion, sliced
1/4 cup golden raisins
2-3 oz chicken breasts, boneless and skinless
- Peel and pit lychees and slice onion.
- Arrange chicken in a small baking dish and cover with all ingredients. Bake at 350 degrees Fahrenheit for 35-40 minutes.
- Serve with brown rice and steamed vegetables.
