Tarragon & Turkey Salad

This recipe is great as a main dish served with a side of soup!

Ingredients

2 Tbsp red wine or 1 1/2 balsamic vinegar

1 Tbsp olive oil

2 tsp dried tarragon leaves

2 tsp spicy mustard

1 tsp sugar

3 cups brown rice, cooked

2 cups cooked turkey or chicken breasts, cubed

1 cup grapes, halved

1 cup bell peppers, chopped

1/3 cup green onions, sliced

1 cup kidney beans, rinsed and drained

Directions

  1. Whisk together red wine, olive oil, tarragon, mustard, and sugar.
  2. Add rice and remaining ingreients, mix well.
  3. Serve.
