Autumn Fruit Compote

Try topping low-fat frozen vanilla yogurt with this delicious fall treat.

Ingredients

  • 1 8 ounce can pineapple chunks
  • 1 1/2 cups orange juice
  • 1 Tbsp cornstarch
  • 1 medium banana, sliced
  • 1 pear, cut into cubes
  • 2 peaches, cut into cubes

Directions

  1. Drain juice from pineapple chunks into small saucepan. Stir in orange juice and cornstarch. Blend until smooth.
  2. Bring to a boil over medium heat, stirring constantly. Let mixture cool and stir in fruit.  Serve.
