Rubies and Greens

This light, colorful salad offers a crisp, tangy taste that will awaken your taste buds. Enjoy!
1/3 cup orange juice
2 tablespoons olive oil
2 tablespoons honey
1/2 teaspoon salt
Ground black pepper to taste
1 bag baby spinach or mixed greens (5 oz.)
3 cups sweet cherries, pits removed
2 cups sliced English (hothouse) cucumber
1/2 cup finely diced red onion
Whisk together orange juice, oil, honey, salt and pepper; set aside. In large bowl, combine salad ingredients. Toss with salad dressing and serve immediately.
Each serving provides: An excellent source of vitamin C, and a good source of vitamin A and fiber.
