A tantalizing summer appetizer guaranteed to bring a smile to your face.
Ingredients6 cups watermelon, seeded and cubed
1 1/2 cups (2 medium) Golden Delicious apples, cored and chopped
1/2 cup (1 medium) onion, finely chopped
1/2 cup green bell pepper, finely chopped
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper, coarsely ground
1/4 teaspoon chili powder
1 tablespoon cider vinegar
In a blender, puree the watermelon until smooth; pour into a large bowl.
Stir in the remaining ingredients.
Cover and refrigerate at least 2 hours, or until well chilled.
Each serving provides: An excellent source of Vitamin A and Vitamin C, and a good source of potassium and fiber.
