Spiced Peach and Dried Plum Compote

Cups of Fruits & Vegetables per Serving:
Ingredients24 oz. white grape juice
3 sticks cinnamon
4 fresh ginger slices, quarter-size, peeled (optional)
1 package (12 oz.) dried plums, unpitted
1 package (6 oz.) dried peaches or nectarines, cut into strips
3 Tbs. brown sugar, firmly packed
2 tsp. vanilla extract
Directions1. In a medium saucepan, combine the grape juice, cinnamon sticks, and ginger. Cover and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the dried plums, dried peaches, and brown sugar; simmer for 5 minutes longer, or until the fruit is soft but holds its shape.
2. Remove from the heat and let cool. Stir in the vanilla; remove the cinnamon sticks and ginger. Transfer to a covered container and refrigerate up to 1 week.
