Spicy Cherry Chutney

Ingredients1 lb sweet cherries, pits and stems removed
3/4 cup brown sugar, firmly packed
1/2 cup (1 medium) onion, chopped
1/3 cup white vinegar
1/4 cup water
1 Tbs. fresh ginger, minced
1 small clove garlic, minced
1 tsp. lemon zest, finely grated
1/2 tsp. salt
1/8 tsp. red pepper flakes, crushed
1. In a large heavy pot, combine all the ingredients, stirring to mix well. Bring to a boil over medium-high heat. Reduce the heat and simmer, stirring frequently, for about 1 hour, or until the mixture begins to thicken. Cool completely.
2. Transfer to a covered container and refrigerate up to 2 weeks.
Frozen Cherry Variation: Remove the cherry stems. Bring frozen cherries and water to a boil. Remove all the pits using a fork. Add the remaining ingredients and proceed as directed above.
Serving Suggestion: Serve with roasted chicken, turkey or pork chops.
