Cantaloupe and Blueberry Parfait
This dish also makes a pretty brunch presentation!
Cups of Fruits & Vegetables per Serving:
- 6 tbsp. non-fat lemon yogurt
1/4 cup fat-free sour cream
2 cups Del Monte® cantaloupe, cubed
1 cup blueberries
4 mint sprigs
Mix yogurt and sour cream.
Layer 1/2 cup of cantaloupe, 1/4 cup of blueberries, and 2 1/2 tablespoons yogurt mixture in each of the glasses.
Garnish with a fresh mint sprig.
