Cantaloupe Chicken Salad
Serve this chicken salad over a small bed of salad greens or on top of a cored tomato.
- 1 medium Del Monte® cantaloupe, cut into small chunks (seeded, no peel)
2 cups pre cooked chicken, diced
2 cups blueberries, fresh
1 cup celery, diced
1 cup Del Monte® green grapes, halved
1/2 cup lite mayonnaise
1/4 cup reduced-fat sour cream
1 tbsp fresh lemon juice
1 1/2 tsp grated lemon peel
1 1/2 tsp sugar
1/2 tsp ground ginger
1/4 tsp salt
1/8 tsp ground pepper
In a large mixing bowl combine cantaloupe, chicken, blueberries, celery, and grapes.
In a small bowl mix the dressing ingredients.
Pour over the chicken mixture and toss gently.
Optional/Additional: Add 1/2 cup walnut pieces or almond slices to cantaloupe/chicken mixture.
This food is a good source of Protein and Niacin, and a very good source of Vitamin A, Vitamin C and Vitamin K.
