Roma Style Spinach
Here is a deliciously different take on your standard spinach side dish.
Ingredients1/4 c. golden raisins
2 tbs. pine nuts
1 clove garlic, minced
1 tbs. olive oil
12 cups Olivia's Organics Baby Spinach
1 tbs. Parmesan cheese, finely shredded
Dash ground, red pepper
In a large skillet, cook raisins, pine nuts, garlic, and red pepper in hot oil over medium heat for 1-2 minutes (or until garlic is light brown).
Add Olivia's Organics Baby Spinach and toss well to coat.
Cook and stir for 2 more minutes or just until spinach is wilted and heated through.
Sprinkle with Parmesan cheese before serving.
