Johnnie's Spinach Chicken Bake
This great recipe is so satisfying on a cold winter evening!
- 3/4 c. seasoned fine dry bread crumbs
1/4 c. Parmesan cheese, grated
12 skinless, boneless chicken breast halves (about 4 pounds total)
1/2 c. green onions, sliced
2 tbs. olive oil
2 tbs. flour
1 c. milk
2 5-oz. packages Olivia's Organics Baby Spinach
1 4-oz. package boiled ham slices, chopped
Preheat oven to 350°.
In a shallow dish, combine bread crumbs and Parmesan cheese and lightly coat chicken pieces in this mixture.
Arrange in 3-quart baking dish.
Reserve the remaining crumb mixture.
In a large saucepan, cook the green onions in the olive oil until tender.
Stir in the flour and add the milk all at once.
Cook and stir until thick and bubbly.
Cook and stir for one minute more.
Stir in Olivia's Organics Baby Spinach and ham.
Spoon spinach mixture over chicken and sprinkle with the remaining crumb mixture.
Bake in preheated oven for 40-45 minutes or until chicken is tender and no longer pink in the center (170 degrees F).
