Fluffy Orange & Lemon Pudding
Try this great fruity dessert recipe!
1/3 cup (75mL) softened butter
3/4 cup (175 mL) granulated sugar
3 eggs, separated
1/3 cup (250 mL) milk
Finely grated rind and juice of 1 OUTSPAN orange
Finely grated rind and juice of 1 lemon
Finely grated rind and juice of 1 lime
Orange slices for garnish
In large bowl, beat butter and sugar until light and fluffy.
Beat in egg yolks, one at a time.
Fold into butter mixture, alternately with milk, making three additions of flour and two of milk.
Stir together orange, lemon and lime rinds and juices: fold into batter.
In separate bowl, whisk egg whites until soft peaks form.
Gently fold into batter.
Pour batter into greased 9-inch (1.5 L) round cake pan.
Bake in center of preheated 350 oF (180 oC) oven for 50 minutes or until golden.
Serve warm or cold, garnished with orange slices.
