Green Peas, Potatoes & Ham

This recipe makes a great one dish meal!
- 2 teaspoons olive oil
2 cups potatoes, peeled and diced
1 slice lunchmeat ham, minced
1 cup green peas, fresh or frozen, thawed
Black pepper to taste
Cook the potatoes in boiling salted water until almost tender, about 8 minutes.
Add the peas and cook 2 minutes.
Add the ham and olive oil to the vegetable mixture.
Season with black pepper and serve.
Each serving provides: a good source of vitamin C, potassium, and fiber.
