Appetizers, Dips & Salsa
Ingredients1/2 pound jicama, peeled and finely chopped
1/2 cup frozen whole corn, thawed and drained
1 cup chopped tomato
4 tablespoons chopped green pepper
2 tablespoons chopped black olives
2 tablespoons cider vinegar
1 tablespoons commercial picante sauce
2 tablespoons vegetable oil
Combine all ingredients in a small mixing bowl; mix well.
Cover & let stand several hours.
Serve at room temperature.
Refrigerate remaining relish.
Each serving provides: an excellent source of vitamin C and a good source of dietary fiber.
