Beet and Spinach Couscous

Ingredients

1 Tbsp Olive oil

2 Tbsp Shallots, chopped

1 cup Couscous, uncooked

1 1/2 cups Beets, fresh, sliced

1/4 tsp Salt

1 cup Spinach leaves

Directions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add shallots and beets.
  3. Cook for about 5 minutes.
  4. Stir in couscous and cook for another minute.
  5. Add water and salt. Let simmer for 10 minutes or until couscous in tender.
  6. Remove from heat and stir in spinach. Stir gently until spinach wilts.
  7. Serve warm.
