This is one of our own Fruits & Veggies—More Matters® recipes. It meets the Centers for Disease Control and Prevention’s strict nutrition guidelines as a healthy recipe.
Cups of Fruits and Vegetables per Serving:
1 large hydroponically grown tomato
¼ hydroponically bell pepper
2 green onions
1 hard boiled egg
2 tbs. sunflower seeds (shelled)
½ cup golden raisins
Creamy style salad dressing of your choice
Wash and pat dry all fresh vegetable ingredients
Dice into very small pieces the tomato, bell pepper, green onions, radishes and hard boiled egg
Reserve the hard boiled egg to use as a topping.
Tear butter lettuce into bite sized pieces
Combine the lettuce, tomato, bell pepper, green onion, radish and raisins
Add creamy style dressing of choice
Top with diced hard boiled egg and sunflower seeds
Serve and enjoy!
