Tasty Options To Start Your Day Off Right

This week is School Breakfast Week and we all know how important it is to start our day with a nutritious meal–not just for our children, but for ourselves as well. A good breakfast has always helped me focus on the tasks at hand and kept me from overeating throughout the day. The key to a good breakfast is to have a good balance of carbohydrates and protein, combined with some dietary fiber. I’ve collected some healthy and flavorful recipes that will appeal to your entire family that you’ll want to add to your recipe index.

 

Tropical Overnight Oatmeal combines old fashioned oats with non-fat milk, non-fat Greek yogurt, and allspice. You’ll refrigerate overnight and then mix in some sliced bananas, fresh pineapple chunks, and slivered almonds right before serving. I love that the bulk of the prep work is done the night before.

Strawberry Mango Feta Toast Points are a different twist on the typical French toast dish. Fresh mangoes and strawberries are combined with feta cheese, basil, balsamic vinegar, and a bit of olive oil for a sweet and savory topping to whole wheat toast.

Easy Spinach and Tomato Frittata is the perfect morning meal for any egg lover. This recipe calls for a cast iron skillet that you’ll use to sauté the spinach until it starts to wilt on top of your stove. Sprinkle on diced tomato, cheese and the beaten eggs. Cook until the egg edges start to set and move to your oven under the broiler. Broiling times may vary from 3-5 minutes, depending on how hot your broiler gets. You’ll want to cook the eggs until done through, but don’t overcook them. This recipe also works well with other veggies such as mushrooms, peppers, and onion.
