We have our own garden and often roast vegetables. Does this decrease the nutritional content? If so, by how much as compared to steaming?
Steaming or roasting vegetables are both great ways to enjoy the bounty from your garden. Water soluble vitamins can leach into the cooking water when vegetables are boiled. Therefore steaming is a better alternative. The less water used in cooking vegetables the more nutrients you will retain in them. Roasting is a good method too since no water is needed.
