Grocery stores spray many vegtables to keep them from dehydrating when exposed to air, like leafy green and other vegetables without a thick skin. You’ll notice that berries and grapes, for example, are not sprayed – they have a natural "bloom" (a light waxy coat) which is it’s own plant-made preservative that you wouldn’t want to wash off until prior to eating it. When washing most fruits and vegetables, it is best to rinse them under cold running water thoroughly. Very few fruits and vegetables need to be soaked in water to clean them.
