WHAT VITAMINS ARE ZUCCHINI HIGH IN?

With a bountiful summer crop of zucchini right around the corner I’m glad you asked that.  Zucchini is a type of summer squash, and summer squash are generally known to be excellent sources of vitamin C.   This nutrient helps heal cuts and wounds and keeps teeth and gums healthy.  Summer squash are also dietary sources of potassium and beta-carotene (a precursor of vitamin A).  See USDA’s food database for the specific nutritional content for 1 cup of chopped zucchini.
