will freezing lettuce harm its nutrient value? Also will it allow for easier digestion of the nutrients? and i know that it will probably turn into a gooey horrible tasting massi know that with certain vegetables like lettuce our stomachs cannot breakdown the cell walls thus boiling is often used to break down some cell walls, unfortunately on top of breaking down cell walls is breaks down nutrients as well. we are then stuck with chewing, the more you chew the lettuce the more nutrients you get. personally i hate the taste of lettuce thus chewing it is horrible.the reason i believe freezing could help is because when you freeze something large ice crystals are formed, this destroys cell walls, if freezing doesn't damage important nutrients i believe that you could eat the now gooey mass with minimal chewing and maximum nutritional value. - Fruits & Veggies More Matters : Health Benefits of Fruits & Vegetables

Thankyou for the quick reply (I was unable to use internet for a while so i apologize for my slow reply.) so as far as my second question goes, will it through cell wall destruction allow for more nutrients to be absorbed in your body without as much chewing? assuming that it wasn’t frozen to quickly of course.
